Mango Ginger Spinach Smoothie

Today is that kind of day where the weather is irritatingly humid. You know, the kind of weather where there’s barely enough sunshine for shorts, but you would surely bake like a potato in jeans. Now, 23 degrees is hardly comparable to the highs of Caribbean I know … and I’m sorry. But I’m still hot! Hot, sticky, hungry! That is a bad combination for me.

So desperate times like these call for an excellent plan of action. Something that will (a) quench my insatiable thirst (b) fill the hunger gap and (c) hit at least 1 of my 5 a day. It’s well past lunch and I have consumed all but zero fruit or vegetables (very unlike me!).

Whilst busy de-cluttering my inbox and pondering the various delights of an Pan African palate, I came across the perfect smoothie recipe. Bingo! A blend of ripened mango and creamy banana whizzed up with coconut water and a handful of fresh spinach … That’s it! It’s fresh, fruity, and ticks all of the boxes. The coconut water delivers pure hydration in a Tetra Pak and the last time I looked mango, banana, and spinach made up 3 of my 5 a day – in one sitting. Woo-hoo! And, there’s definitely enough fibre to keep me full until my next snack attack. Phew! It’s quick, simple, and refreshing.

Now, with the easy application of 5 minutes and a blender, I’ll be sitting on the white beaches of the Caribbean!

Before I go and enjoy this, try not to be put off by the spinach, you really can’t taste it, and it actually adds to the creaminess, trust me … Enjoy!


Mango Ginger Spinach Smoothie

Prep time: 5 mins.  Cook time: 0 mins. Serves: 1-2


  • 2 handfulls fresh spinach
  • 2 cups coconut water, unsweetened
  • 1 banana
  • 1 mango
  • 1 -1 1/2 tsp ginger ( adjust to taste)


  1. Blend coconut water and spinach together.
  2. Add banana, mango and ginger, then blend.
  3. Enjoy!
