Seeded Carrot Salad & Herbed Chickpea Salad

If you are anything like me as soon as the weather gets warmer all you seem to want to eat are salads. To celebrate the return of the spring, and the pending summer, I’m sharing two easy peasy salad recipes that will have your taste buds dancing the Cha-Cha. Firstly, a gorgeous Seeded Carrot Salad, and to follow a lovely Herbed Chickpea Salad. They make a perfect combination.

 

Seeded Carrot Salad

Prep time: 7mins  Cook time: 0 mins  Serves: 2-4

Ingredients

  • 2-3 carrots (grated)
  • 1 small clove garlic (crushed)
  • 2 handfuls of pumpkin seeds
  • 2 Tbsp hemp hearts (hulled hemp seeds)
  • 1 1/2 tsp sesame seeds
  • Extra virgin olive oil

Instructions

  1. Add carrots, garlic, hemp seeds, sesame seeds into a bowl
  2. Add pumpkins seeds to a heated frying pan and toast on medium heat for a few minutes or until seeds begin to gently pop. Add to salad mix immediately.
  3. Drizzle with olive oil.
  4. Mix thoroughly to combine ingredients. Allow to marinate for a little while and serve at room temperature.

Herbed Chickpea Salad

Prep time: 7 mins  Cook time: 0 mins  Serves: 2-4

Ingredients

  • 1 can/ 240g cooked chickpea (rinsed and thoroughly drained)
  • 2 inches/ 5csm cucumber (diced)
  • 2 handfuls of cherry tomatoes (quartered)
  • 1 handful fresh parsley (chopped)
  • 1/4 handful of fresh coriander (chopped)
  • 1 small clove garlic (crushed)
  • 1/2 red onion (sliced)
  • Extra virgin olive oil
  • juice of 1/2 lime (or to taste)
  • salt & pepper to taste

Instructions:

Add chickpeas, cucumber, tomatoes, parsley, coriander, garlic and onion into a bowl. Drizzle with olive oil, lime juice and add salt and pepper to taste. Mix thoroughly to combine ingredients. Allow to marinate for a little while and serve at room temperature.

 

Notes: Feel free to add or subtract ingredients were necessary to make the salads taste just as you would like them. Add olive oil to taste. Could be kept for up to one day in the refrigerated although at it’s best and freshest on the same day.
